Easy Hummus
A delicious blend of garbanzo, garlic, lemon and tahini.

Equipment
- 1 pressure cooker
- 1 Food Processor
Ingredients
- 2 cups chickpeas (garbanzo beans)
- juice of 2-3 lemons
- 3-5 cloves garlic, peeled and smashed
- 1-3 teaspoons salt (to taste)
- 2-5 tablespoons tahini (to taste)
- 2-5 tablespoons bean cooking liquid
Instructions
Plan ahead for overnight soak
- Pick through the beans, rinse and cover (2-3" inches over the beans) with cold water - soak the beans overnight.
Cook those beans
- Next day: rinse the beans and drain. Add them to your pressure cooker. Cook on manual pressure 15 minutes with 10-15 minutes natural release.
- Check the beans by smashing a few in a bowl with the back of a spoon. Drain the beans making sure to reserve at least a cup of the cooking water.
Blend
- Add at least half of the beans to the bowl of your food processor and blend until smooth and creamy.
- Add in: the garlic, 1/2 of your lemon juice, at least 1 tsp salt, at least 2 tablespoons tahini and at least 2 tablespoons of the cooking liquid. Blend
Taste
- Taste and adjust seasonings (and blend again) until it tastes amazing to you! Top with a little olive oil and paprika for serving.
