Instant Pot Refried Beans

Economical and easy homemade refried beans!

Equipment

  • 1 6qt Pressure Cooker this recipe relies on a 6qt or larger instant pot. If your pressure cooker is smaller, you will need to cut this recipe in half.
  • 1 food processor or blender

Ingredients

  • 2 cups dried pinto beans, sorted, rinsed and drained
  • 1 tbsp olive oil extra virgin (any cooking oil of your choice)
  • 1 small onion, chopped
  • 1 large carrot, peeled and grated
  • 1/2 large jalapeño, seeded and diced *increase for heat/decrease for more mild
  • 5 cloves garlic, diced
  • 4 cups chicken stock *any stock will do
  • 3 cups water
  • 2 bay leaves
  • 1 1/2 tsp Kosher salt
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/8 tsp cayenne pepper *increase to 1/4 tsp (or more if you like the burn)

Instructions

Sort and rinse the beans, rinse until water runs clear and set aside to drain while you prep other ingredients.

    Saute the Veggies

    • Select the SAUTE function button on the Instant Pot and allow it to heat up. Add the olive oil and wait until it starts to shimmer.
    • Add the onions and Jalapeño to the hot oil in the pot. Cook (Stirring occasionally) until softened and onions are translucent. About 2 minutes.
    • Add the garlic and the grated carrot and cook another 30 seconds. Add the spices and stir.
    • Add a bit of water and stir to make sure nothing is sticking to the bottom of the pot. Add all remaining ingredients to the pot. Stock, Water, and beans. Stir to make sure all is combined.

    Cook on Manual Pressure 45 minutes with natural release (about 25 minutes)

      Allow mixture to cool with the lid off for a few minutes

        Separate bean/veggie mix from cooking liquid

        • With a mesh strainer over a bowl, ladle the hot mixture into the strainer. Be sure to look for and remove the bay leaves as you do this. This is will be very hot, so be careful not to burn yourself!

        Blend up the refried beans!

        • Put the bean/veggie mix into the bowl of a food processor and puree. Since this is HOT please do this in two smaller batches vs. one big batch. Your beans will be steaming hot, and care must be taken to not get burned. You can also wait for the beans to cool thoroughly before undertaking this step.
        • Taste and adjust seasonings as needed.
        • Allow to cool completely before placing in the fridge. Will keep about a week in the fridge and 3-4 months frozen.
