Easy Weeknight Chicken Bake

A very quick dinner to put together - a real hearty crowd pleaser.

Ingredients

  • 1 pkg chicken stuffing mix
  • 2 cups cooked & shredded chicken
  • 1 can cream of chicken soup
  • 1/3 cup sour cream
  • 16 oz frozen mixed vegetables, thawed & drained

Instructions

  • Preheat oven to 400° Make the stuffing according to package directions
  • Mix chicken, soup, sour cream and vegetables together in a large bowl
  • pour mixture into a 13x9 baking dish and top with prepared stuffing
  • Bake 15-20 minutes

Notes

This recipe is easily doubled or tripled and frozen. It is easier to prepare the frozen dinner if you let it thaw overnight in your refrigerator first.
You can also use raw chicken in preparing this recipe. If using raw chicken increase cooking time to a strict 30 minutes and ensure the chicken is cooked through. We prefer to use already cooked chicken in this recipe.
