Banana Vinegar Chicken Kebabs
Delicious banana vinegar adds a slightly sweet tropical flavor to your chicken kebabs. People will wonder what your secret is.

- 1 grill
- bamboo skewers
Ingredients
- 2 lbs chicken, cut into 1 1/2" chunks
- 1/2 cup banana vinegar
- 1/2 cup extra virgin olive oil
- 4-5 cloves garlic, peeled and roughly chopped
- 1 tbsp fresh oregano, chopped 1 tsp dried
- 1 tbsp fresh thyme, chopped 3/4 tsp dried
- 1 tbsp fresh tarragon, chopped 1 tsp dried
- 1/2 tsp pepper, course ground
- 1 tsp course Kosher salt
- 2 large bell peppers
- 1 large red onion
- 1 large zucchini
- 1/2 lb cherry tomatoes
Instructions
Make the marinade
- In a medium bowl, mix the vinegar, olive oil, garlic, oregano, thyme, tarragon, pepper and salt. Mix well and add the chicken pieces. Cover and refrigerate for at least 30 minutes. (You can marinate up to overnight)
Chop your vegetables into large pieces (sized to match the size of your chicken)
Soak your bamboo skewers
Thread chicken and vegetables onto the skewers (discard marinade)
Preheat your grill over medium high heat. Cook kebabs turning often until chicken is done (165°)

Notes
You can use any combination of fresh vegetables that you like. Mix it up and try new things. Tastes great when served with basmati turmeric rice.
