Black Rice Salad

Crisp and refreshing basil laden black rice salad. Great for a meal or a side.

Equipment

  • 1 blender

Ingredients

  • 2 cups cooked black rice also called Forbidden Rice
  • 1 1/2 cups fresh basil leaves, divided
  • 1/2 cup olive oil, extra virgin
  • 3 tbsp bottled lemon juice fresh is ok too if you have one
  • 3 ribs celery, chopped
  • 1 large apple, peeled and chopped
  • 1 cup green onions, chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • put 1 cup basil, oil, lemon juice, salt and pepper in blender and emulsify until you have a nice and very green dressing. Set aside.
  • In a medium bowl add rice, celery, apples, green onions and remaining 1/2 cup of basil (cut or torn into small pieces) and pour dressing over. Mix well. Cover and let rest in the fridge until you are ready to serve.
  • Serve chilled or room temperature.

Notes

We didn't have fresh basil and ended up eyeballing frozen basil in olive oil. We grow basil all summer and it saves well in ice cube trays if 100% covered in the oil. It was perfect anyway without having to run to the store for fresh basil.
