Skip the kneading and make this easy bread. So soft and tasty, this makes an excellent sandwich bread.

Ingredients

  • 3 cups 00 Flour (AP will work also)
  • 1 1/4 cups Warm water (110°-115°
  • 1 tbsp Honey
  • 2 1/4 tsp Active dry yeast
  • 3/4 tsp Kosher salt
  • 1/4 cup Extra Virgin Olive Oil
  • 3 tbsp Extra Virgin Olive Oil (divided)

Instructions

  • Place water in a large mixing bowl. Add yeast and honey. Stir well to combine. Let this stand for 5-10 minutes until foaming (shows yeast is active)
  • Add flour, 1/4 cup olive oil and salt. mix well until smooth. This dough will be wet.
  • Scrape down the sides of the bowl, cover and let sit in a warm, draft free place about 45 minutes until doubled in size.

Preheat oven to 425°

  • Brush 1 tablespoon oil on the bottom and up the sides of a 9 x 13 pan. Scrape dough into the pan. Rub oil onto your hands and spread the dough into the corners of the pan. (level out the dough). If the dough won't spread easily, let it rest in the pan for 10 minutes and try again.
  • Drizzle 2 tablespoons of oil over the top of the dough and make indentations with your fingers. let rise again until doubled (about 30 minutes)

bake 20-25 minutes until golden brown
