Blackstone Vegetable Focaccia Sandwices
Easy vegetarian sandwiches - a bit of summer in every bite!

- 1 Blackstone Griddle You can use: saute pan, outdoor grill, or indoor grill
Ingredients
- 2/3 cup mayonnaise
- 2 teaspoons fresh lemon juice
- 1/2 lemon zest
- 1-2 large cloves garlic, minced
- 1 jar roasted bell peppers
- 1 cup fresh basil
- 3-4 cups sliced red onion
- 2 medium zucchini, sliced
- 1 pkg sliced provolone cheese
- 3-4 tablespoons cooking oil olive oil, avocado, etc.
- salt to taste
- pepper to taste
- Greek seasoning to taste
- 1 pan Foccacia bread
Instructions
Mix the mayonnaise
- In a small bowl, mix mayonnaise, garlic, lemon juice & lemon zest. Mix well, cover and chill. (the mayonnaise, but seriously...relax yourself if you can.)
Preheat Blackstone over medium high heat
- add 2-3 tablespoons of oil to your hot griddle. Add onions, yellow squash & zucchini and cook until the onions are soft and the squash is starting to brown. Add your seasoning.
- It is important to keep the food moving on the griddle. That way, the veggies will cook evenly. Once cooked, remove the food and set aside for sandwich assembly.
Build your sandwiches
- Spread your lemony garlicy mayonnaise on the bread and build the sandwich with roasted bell peppers, cheese, basil and your cooked vegetables. Serve warm.
