Easy vegetarian sandwiches - a bit of summer in every bite!

Ingredients
2/3cupmayonnaise
2teaspoonsfresh lemon juice
1/2lemonzest
1-2largecloves garlic, minced
1jarroasted bell peppers
1cupfresh basil
3-4cupssliced red onion
2mediumzucchini, sliced
1pkgsliced provolone cheese
3-4 tablespoonscooking oilolive oil, avocado, etc.

Instructions
Mix the mayonnaise
In a small bowl, mix mayonnaise, garlic, lemon juice & lemon zest. Mix well, cover and chill. (the mayonnaise, but seriously...relax yourself if you can.)
Preheat Blackstone over medium high heat
add 2-3 tablespoons of oil to your hot griddle. Add onions, yellow squash & zucchini and cook until the onions are soft and the squash is starting to brown. Add your seasoning.
It is important to keep the food moving on the griddle. That way, the veggies will cook evenly. Once cooked, remove the food and set aside for sandwich assembly.
Build your sandwiches
Spread your lemony garlicy mayonnaise on the bread and build the sandwich with roasted bell peppers, cheese, basil and your cooked vegetables. Serve warm.
