Spiced Butternut Cherry Pecan Muffins
Easy to make and so delicious any time of the year!

Ingredients
- 1 3/4 cups all purpose flour
- 1 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cardamom
- 1/2 tsp kosher salt
- 1 cup butternut puree pumpkin is a good alternative
- 1 cup brown sugar, packed
- 1/2 cup white sugar
- 2 large eggs, slightly scrambled room temperature
- 1/2 cup butter, melted & cooled
- 1/2 cup dried tart cherries, roughly chopped
- 1/2 cup chopped pecans
- 1/8 cup raw sugar
Instructions
Preheat oven to 350℉ and prepare muffin pan (either use paper liners or grease and flour cups. If using silicone muffin pans, you don't need to do either)
- In medium bowl, whisk together dry ingredients
- This is: flour, baking powder, spices, & salt. Set this aside
In a large mixing bowl, whisk together butternut puree, sugars, egg and butter
Add the dry ingredients to the wet ingredients.
- Mix together well, but don't over mix.
Fold in the cherries and pecans
- Put about 3 tablespoons of batter in each cup of the pan. Sprinkle the top of each with 1/2 - 1 teaspoon raw sugar.
