Ingredients
1 3/4cupsall purpose flour
1 1/2tspbaking powder
1tspground cinnamon
1/2tspground ginger
1/4tspground nutmeg
1/4tspground cardamom
1/2tspkosher salt
1cupbutternut pureepumpkin is a good alternative
1cupbrown sugar, packed
1/2cupwhite sugar
2largeeggs, slightly scrambledroom temperature
1/2cupbutter, melted & cooled
1/2cupdried tart cherries, roughly chopped
1/2cupchopped pecans
1/8cupraw sugar
Instructions
Preheat oven to 350℉ and prepare muffin pan (either use paper liners or grease and flour cups. If using silicone muffin pans, you don't need to do either)
In medium bowl, whisk together dry ingredients
This is: flour, baking powder, spices, & salt. Set this aside
In a large mixing bowl, whisk together butternut puree, sugars, egg and butter
Add the dry ingredients to the wet ingredients.
Mix together well, but don't over mix.
Fold in the cherries and pecans
Put about 3 tablespoons of batter in each cup of the pan. Sprinkle the top of each with 1/2 - 1 teaspoon raw sugar.
Bake for 20 minutes and check. Keep a careful eye on them after 20 minute check adding time in 2 minute increments.Muffins are done when a toothpick inserted in center of center cupcake comes out "clean" Time can be around 20-25 minutes.
