Big Batch Black Bean & Chicken Burritos

Prepare a huge amount of burritos to feed a small army or stash in your freezer for healthy fast food!

Equipment

  • 1 microwave

Ingredients

  • 4 cups refried black beans
  • 4 cups shredded chicken
  • 2 pkgs Baja blend corn (thawed from frozen & drained)
  • 1-2 pds cheese (crumbled or shredded)
  • ¼-½ cup salsa
  • 20-25 flour tortillas, burrito size

Instructions

  • Mix the beans and chicken in a large pot or bowl - you want to use equal amounts of each
  • Add the baja blend corn and any other vegetables
  • Add salsa and any other wet ingredients
  • mix in the cheese (add cheese if mixture seems too wet - you want the mix to be dry)
  • layer a single wax paper sheet, alternating with a single tortilla in a stack of five or six (you want the wax paper on the bottom)
  • Microwave the tortillas for 10 seconds
  • Put one over full 1/2 cup of the mix per tortilla and roll up folding in the sides part-way through.
  • Wrap your burrito in the wax paper (that should have been underneath the tortilla)

Cooking instructions

  • Microwave: in the waxed paper for 1:20 seconds on 50% power (add 30 seconds at high if not hot enough)
  • In the Pan: Microwave first for 30 seconds to a minute. Then add 2-3 tablespoons oil to a hot skillet and fry the burrito for 3-4 minutes on each side until the tortilla is crispy and golden brown
  • In the Oven: Place the burrito on a rimmed baking sheet and bake in a 350° oven for about 25 minutes (check after 15)
  • In the Air Fryer: Microwave first for 30 seconds and cook in the air fryer for 10 minutes at 325° (you may need to adjust this depending on your fryer)

Notes

You can add all kinds of things to the mix:
  • Rice
  • Chilis
  • Black Olives
  • Peppers
Freezing instructions:
Put 4 burritos in a gallon zip-top freezer bag and freeze. When you want to eat these, take them out and allow to defrost overnight in the refrigerator. You can take them out and microwave them from frozen, but I find I have better luck if I plan ahead a little bit.
