Blackstone Vegetable Focaccia Sandwices

Easy vegetarian sandwiches - a bit of summer in every bite!

Equipment

  • 1 Blackstone Griddle You can use: saute pan, outdoor grill, or indoor grill

Ingredients

  • 2/3 cup mayonnaise
  • 2 teaspoons fresh lemon juice
  • 1/2 lemon zest
  • 1-2 large cloves garlic, minced
  • 1 jar roasted bell peppers
  • 1 cup fresh basil
  • 3-4 cups sliced red onion
  • 2 medium zucchini, sliced
  • 1 pkg sliced provolone cheese
  • 3-4 tablespoons cooking oil olive oil, avocado, etc.
  • salt to taste
  • pepper to taste
  • Greek seasoning to taste
  • 1 pan Foccacia bread

Instructions

Mix the mayonnaise

  • In a small bowl, mix mayonnaise, garlic, lemon juice & lemon zest. Mix well, cover and chill. (the mayonnaise, but seriously...relax yourself if you can.)

Preheat Blackstone over medium high heat

  • add 2-3 tablespoons of oil to your hot griddle. Add onions, yellow squash & zucchini and cook until the onions are soft and the squash is starting to brown. Add your seasoning.
  • It is important to keep the food moving on the griddle. That way, the veggies will cook evenly. Once cooked, remove the food and set aside for sandwich assembly.

Build your sandwiches

  • Spread your lemony garlicy mayonnaise on the bread and build the sandwich with roasted bell peppers, cheese, basil and your cooked vegetables. Serve warm.
