Peanut Butter Coconut Granola
Sweet, salty crunchy granola that is so easy to make and so hard to resist.

Ingredients
- 3 cups old fashioned oats
- 2/3 cup peanuts (roasted & salted)
- 1/3 cup creamy peanut butter
- 1/4 cup honey
- 3 tbsp coconut oil, melted
- 3/4 tsp Himalayan or sea salt
- 2 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1/2 cup sweetened flaked coconut
- 1/3 cup mini chocolate chips (semi-sweet)
Instructions
- Heat oven to 325°
- Line a rimmed baking sheet or sheet pan with parchment paper
- In a large bowl, mix together the oatmeal and chopped peanuts - set aside
- In a medium sized bowl, mix the coconut oil, peanut butter, honey, vanilla, salt and cinnamon.
- Put this in the microwave for 30 seconds and mix again
- Add this mixture to the oat/nut mix and stir to combine well
- Spread the granola out evenly on the prepared baking sheet and put into the oven for 12 minutes.
- Stir well and put back into the oven for another 10 minutes (check this a few times because it can burn easily at this stage.
- When the granola is crispy and brown to your liking, remove from the oven and mix in the coconut
- Return this to the oven for another 4-5 minutes.
- Remove from the oven and let it sit until it is at room temperature
- Mix in the chocolate chips
- Store in an airtight container. It is supposed to last for at least a month...but really, you will probably eat it before then!
