Peanut Butter Coconut Granola

Sweet, salty crunchy granola that is so easy to make and so hard to resist.

Ingredients

  • 3 cups old fashioned oats
  • 2/3 cup peanuts (roasted & salted)
  • 1/3 cup creamy peanut butter
  • 1/4 cup honey
  • 3 tbsp coconut oil, melted
  • 3/4 tsp Himalayan or sea salt
  • 2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/2 cup sweetened flaked coconut
  • 1/3 cup mini chocolate chips (semi-sweet)

Instructions

  • Heat oven to 325°
  • Line a rimmed baking sheet or sheet pan with parchment paper
  • In a large bowl, mix together the oatmeal and chopped peanuts - set aside
  • In a medium sized bowl, mix the coconut oil, peanut butter, honey, vanilla, salt and cinnamon.
  • Put this in the microwave for 30 seconds and mix again
  • Add this mixture to the oat/nut mix and stir to combine well
  • Spread the granola out evenly on the prepared baking sheet and put into the oven for 12 minutes.
  • Stir well and put back into the oven for another 10 minutes (check this a few times because it can burn easily at this stage.
  • When the granola is crispy and brown to your liking, remove from the oven and mix in the coconut
  • Return this to the oven for another 4-5 minutes.
  • Remove from the oven and let it sit until it is at room temperature
  • Mix in the chocolate chips
  • Store in an airtight container. It is supposed to last for at least a month...but really, you will probably eat it before then!
