Heat oven to 325°
Line a rimmed baking sheet or sheet pan with parchment paper
In a large bowl, mix together the oatmeal and chopped peanuts - set aside
In a medium sized bowl, mix the coconut oil, peanut butter, honey, vanilla, salt and cinnamon.
Put this in the microwave for 30 seconds and mix again
Add this mixture to the oat/nut mix and stir to combine well
Spread the granola out evenly on the prepared baking sheet and put into the oven for 12 minutes.
Stir well and put back into the oven for another 10 minutes (check this a few times because it can burn easily at this stage.
When the granola is crispy and brown to your liking, remove from the oven and mix in the coconut
Return this to the oven for another 4-5 minutes.
Remove from the oven and let it sit until it is at room temperature
Mix in the chocolate chips
Store in an airtight container. It is supposed to last for at least a month...but really, you will probably eat it before then!
