Easy Spanish Rice

Quick and tasty rice makes an excellent main meal or side dish.
Course Side Dish

Ingredients

  • 2-3 tbsp cooking oil
  • 1 1/2 cups white rice
  • 2 cups chicken broth
  • 2 tbsp onion, chopped
  • 1 cup chunky salsa

Instructions

  • Add oil to a large saute pan or sauce pan (it will need to have a lid) and heat on medium high heat.
  • Add the onion and cook for about 5 minutes (until tender).
  • Add the rice and stir it around often until the rice starts to brown.
  • Stir in the broth and salsa.
  • Reduce heat, cover and simmer 20 minutes or until all the liquid has been absorbed.
