Easy Spanish Rice
Quick and tasty rice makes an excellent main meal or side dish.
Course Side Dish
Ingredients
- 2-3 tbsp cooking oil
- 1 1/2 cups white rice
- 2 cups chicken broth
- 2 tbsp onion, chopped
- 1 cup chunky salsa
Instructions
- Add oil to a large saute pan or sauce pan (it will need to have a lid) and heat on medium high heat.
- Add the onion and cook for about 5 minutes (until tender).
- Add the rice and stir it around often until the rice starts to brown.
- Stir in the broth and salsa.
- Reduce heat, cover and simmer 20 minutes or until all the liquid has been absorbed.
