Easy Spanish Rice
Quick and tasty rice makes an excellent main meal or side dish.
- 2-3 tbsp cooking oil
- 1 1/2 cups white rice
- 2 cups chicken broth
- 2 tbsp onion, chopped
- 1 cup chunky salsa
Add oil to a large saute pan or sauce pan (it will need to have a lid) and heat on medium high heat.
Add the onion and cook for about 5 minutes (until tender).
Add the rice and stir it around often until the rice starts to brown.
Stir in the broth and salsa.
Reduce heat, cover and simmer 20 minutes or until all the liquid has been absorbed.
