Spiced Butternut Cherry Pecan Muffins

Easy to make and so delicious any time of the year!

Ingredients

  • 1 3/4 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cardamom
  • 1/2 tsp kosher salt
  • 1 cup butternut puree pumpkin is a good alternative
  • 1 cup brown sugar, packed
  • 1/2 cup white sugar
  • 2 large eggs, slightly scrambled room temperature
  • 1/2 cup butter, melted & cooled
  • 1/2 cup dried tart cherries, roughly chopped
  • 1/2 cup chopped pecans
  • 1/8 cup raw sugar

Instructions

Preheat oven to 350℉ and prepare muffin pan (either use paper liners or grease and flour cups. If using silicone muffin pans, you don't need to do either)

  • In medium bowl, whisk together dry ingredients
  • This is: flour, baking powder, spices, & salt. Set this aside

In a large mixing bowl, whisk together butternut puree, sugars, egg and butter

    Add the dry ingredients to the wet ingredients.

    • Mix together well, but don't over mix.

    Fold in the cherries and pecans

    • Put about 3 tablespoons of batter in each cup of the pan. Sprinkle the top of each with 1/2 - 1 teaspoon raw sugar.

    Bake for 20 minutes and check. Keep a careful eye on them after 20 minute check adding time in 2 minute increments.Muffins are done when a toothpick inserted in center of center cupcake comes out "clean" Time can be around 20-25 minutes.
